S’more Brownie Bars

Description

A twist on two iconic American classics, s’more brownie bars! Combining the best of both worlds with a buttery graham cracker crust, chewy chocolate brownie and toasty marshmallow perfection.


Ingredients

Graham Layer

  • 3/4 cup graham cracker crumbs
  • 4 TBS butter, melted

Brownie Layer

  • 1/2 cup all purpose flour
  • 1/2 cup cocoa powder (natural unsweetened)
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter (1 stick)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • (Optional) 1/2 cup chocolate chips or chopped nuts

Topping

  • 1 1/2 cups mini marshmallows

Instructions

  1. Line an 8″ square baking pan with foil, leaving an overhang on two opposite sides. Grease pan lightly with cooking spray. Preheat oven to 350°F.
  2. Melt 4 TBS butter in microwave, in a small bowl or 2 cup size measuring cup. Stir in graham cracker crumbs and mix until crumbs are coated in the butter. Spread crumbs into an even layer in the prepared baking pan, pressing down gently but firmly to compact.
  3. In a small bowl, whisk together flour, cocoa powder, baking powder and salt. In a medium size saucepan (about 2-3 quart size) melt remaining 1/2 cup butter over medium-low heat. Once melted remove from heat, let cool slightly, and whisk in sugar. Whisk in eggs and vanilla. Add dry ingredients to sugar/egg mixture and mix until thoroughly combined. Stir in chocolate chips or nuts if desired.
  4. Layer brownie batter evenly over the graham cracker crumbs. Bake for 28-30 minutes, or until a toothpick inserted in the center comes out mostly clean (a few moist crumbs are okay).
  5. Once out of the oven, immediately top the brownies with mini marshmallows in an even layer. The heat from the brownies will begin to melt/stick the marshmallows to the top of the brownies. Let cool for about 10 minutes. Use a kitchen torch to toast the marshmallows until desired level of doneness. (Alternatively, use oven broiler to toast marshmallows. Place under broiler for 30 seconds to a minute or so, keeping a very close eye on it! The marshmallows can burn quickly.)
  6. Let cool completely before slicing into 16 squares.

Notes

*If making for a crowd, the recipe can be doubled and made in a 13″x9″ pan. Baking time may need to be adjusted some, so keep that in mind.
