GUYS, I’m legit sooo excited for these s’more brownie bars!! They combine two of my favorite things, so of course, what’s not to love! I’ve honestly been thinking about making these for a while now. Actually I’ve been thinking about quite a few desserts that I could put a s’more twist on…but we’ll go with one at a time for now. 😄
One time I even made s’mores macarons! Those were fun. I should revisit that recipe one day…but back to these oh so fun, and chewy s’more brownie bars!
I don’t know about everyone else but my love for s’mores stems from years of camping when I was growing up. Every year my family would pack up and head out for our annual week long camping trip in southern Oregon. We looked forward to it all year. It was our thing. And our spot! With a designated camp site we just HAD to get each year.
This annual vacation really made me love and crave any and all camping trips! Over the years I’ve camped at many other locations and continue to go whenever I can, but one thing will always remain the same no matter the trip. It’s not camping unless there’s s’mores!!
The warm honey flavor of the crackers, gooey melted chocolate, and perfectly toasted marshmallows (I like mine golden-y brown all the way round, but not burnt!) Ahhhhh, I can picture it now.
The second half of this epic combo is also a result of my childhood. You see, there was this time when my Dad actually used to cook! And by cook I mean quesadillas, Sunday morning pancakes, or his specialty…boxed brownies! Haha, yes boxed! Definitely a family favorite! Well one evening Dad suggested I make the brownies that time…and you can guess what happened next. Dad never made brownies again! It was his clever plan to pass this task off to me! Needless to say I didn’t mind much! 😉
Basically the inspiration behind these s’more brownie bars has been brewing in my head for awhile now. If you read all that, cool, you now know a little bit more about me and my “sweet” childhood. But if not, that’s cool too. Really you’re all just hear for some mouth watering food pics and a kick-ass recipe and maybe a little inspiration. And I’m 100% ok with that! Enjoy my friends.

Description
A twist on two iconic American classics, s’more brownie bars! Combining the best of both worlds with a buttery graham cracker crust, chewy chocolate brownie and toasty marshmallow perfection.
Ingredients
Graham Layer
- 3/4 cup graham cracker crumbs
- 4 TBS butter, melted
Brownie Layer
- 1/2 cup all purpose flour
- 1/2 cup cocoa powder (natural unsweetened)
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup butter (1 stick)
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- (Optional) 1/2 cup chocolate chips or chopped nuts
Topping
- 1 1/2 cups mini marshmallows
Instructions
- Line an 8″ square baking pan with foil, leaving an overhang on two opposite sides. Grease pan lightly with cooking spray. Preheat oven to 350°F.
- Melt 4 TBS butter in microwave, in a small bowl or 2 cup size measuring cup. Stir in graham cracker crumbs and mix until crumbs are coated in the butter. Spread crumbs into an even layer in the prepared baking pan, pressing down gently but firmly to compact.
- In a small bowl, whisk together flour, cocoa powder, baking powder and salt. In a medium size saucepan (about 2-3 quart size) melt remaining 1/2 cup butter over medium-low heat. Once melted remove from heat, let cool slightly, and whisk in sugar. Whisk in eggs and vanilla. Add dry ingredients to sugar/egg mixture and mix until thoroughly combined. Stir in chocolate chips or nuts if desired.
- Layer brownie batter evenly over the graham cracker crumbs. Bake for 28-30 minutes, or until a toothpick inserted in the center comes out mostly clean (a few moist crumbs are okay).
- Once out of the oven, immediately top the brownies with mini marshmallows in an even layer. The heat from the brownies will begin to melt/stick the marshmallows to the top of the brownies. Let cool for about 10 minutes. Use a kitchen torch to toast the marshmallows until desired level of doneness. (Alternatively, use oven broiler to toast marshmallows. Place under broiler for 30 seconds to a minute or so, keeping a very close eye on it! The marshmallows can burn quickly.)
- Let cool completely before slicing into 16 squares.
Notes
*If making for a crowd, the recipe can be doubled and made in a 13″x9″ pan. Baking time may need to be adjusted some, so keep that in mind.
