We’re keeping things super simple today with some extra tasty homemade vanilla chai spiced granola! Granola is SUPER easy to make and very customizable. Literally toss all the ingredients together and throw into the oven. Eat it for brekkie with some yogurt or milk or take it outside with you on a hike. You can’t go wrong here!
Part of my reasoning behind making granola was being able to take a healthier homemade snack on camping trips or weekend hikes. Not that I’m doing much of either right now, in the middle of winter! ❄️ Brrrr! But it’s something I do think about regularly. Even more so currently since plans are forming for my next backpacking trip!!
Date and location/trail have been chosen and I couldn’t be more stoked! Too bad it’s not until JUNE!!!
Other than having granola as a handy snack I also wanted something new for a breakfast option. Eggs are great, but I honestly don’t have the time or energy to make them most weekday mornings. I love overnight oats but if I didn’t prep them the night before than I’m S.O.L. And I can’t for the life of me eat greek yogurt on it’s own! 😝 Must have some honey, fruit and GRANOLA! Bingo!

This vanilla chai spiced granola will be great any time of year but pairing the warm chai spices with the sweetness of maple syrup and comforting woodsy notes of vanilla and you’ve got something that reminds me very much of a cozy winter beverage. Plus your house will smell AMAZING!!!
Seriously, the smells are one of my favorite parts of baking. (Besides the eating of course! 😋) Do yourself a favor and make some of this granola!
The amounts listed in the recipe make a smaller batch than a lot of other recipes I see out there on the internet. This is intentional, because I personally don’t like or need to have a ton of extra food hanging around since we’re only a household of 2. BUT, you can easily double this recipe to serve a larger household. Let me know what you think if you try it out!

Description
Crunchy, chewy, vanilla and chai spiced granola. A batch of deliciously spiced oats, almonds and pecans. Perfectly paired with your breakfast fruit & yogurt, milk, or on it’s own anytime of day as a snack.
Ingredients
- 1 1/2 cups old fashioned oats
- 1/2 cup pecans, chopped
- 1/2 cup almonds, chopped
- 1/4 tsp sea salt
- 1 tsp chai spice (store bought or homemade, see notes)
- 1/4 cup coconut oil, melted
- 1/4 cup real maple syrup
- 1 tsp vanilla bean paste (or extract)
- (Optional) 4-5 dried figs, chopped
Instructions
- Preheat oven to 325°F and line a baking sheet with parchment paper.
- Combine oats through chai spice in a medium to large size bowl.
- Mix together melted coconut oil, maple syrup and vanilla bean paste (or extract) in a small bowl. Pour over dry ingredients and stir to coat thoroughly. (I like to melt the coconut oil in a measuring cup in the microwave and then add syrup and vanilla to measuring cup for easy pouring).
- Pour granola mixture onto baking sheet and press down with a wooden spoon into an even and lightly compacted layer.
- Bake for 25 min, stirring halfway through baking.
- Allow to cool completely before removing from pan and adding dried figs. (Letting cool completely will help form large crispy clumps in the granola!)
Notes
*This recipe can easily be doubled for a larger quantity.
**DIY CHAI SPICE:
3 tsp ground ginger
2 tsp ground cinnamon
1 tsp ground cardamom
1 tsp ground allspice
1 tsp ground cloves
(Optional) 1/4 tsp black pepper
Mix all ingredients together in small jar or bowl.
Make a double or triple batch for use in other baked goods!
