A perfectly moist buttermilk cake sandwiched with a strawberry lavender compote and fresh whipped cream, and topped with a light and sweet lavender buttercream. Need I say more?
Someone remind me not to take on too many projects/hobbies at one time…oh wait to late for that. I seem to usually find myself in one of two situations, either super busy or super lazy. Ideally, I would be able to stay somewhere in the middle of these two zones but there are just so many great things to do/see/learn in this world that my mind is constantly brewing with ideas, or on the opposite spectrum my mind is too overwhelmed and needs a break. Of course baking is one of my biggest hobbies and provides a continuous learning experience for me.
A recent project involved this cake that I had seen on Pinterest many months ago. I loved the idea of this flavor combination and the simple classic look of the cake. That perfectly smooth frosted buttercream look is on the more basic side of cake decorating but can still be a bit tricky to achieve. Hell all frosting techniques can be tricky without a LOT of practice.
The original recipe is from the site Sweetapolita. Rosie, the creator behind the site, has filled her blog with such a variety of eye candy that I hope to be as talented as she one day.
While I followed the original recipe almost exactly I would recommend a few changes. First is with the amount of lavender in both the frosting and compote. I felt that the lavender was a little to subtle and wanted it to stand out more than it did. For that reason I will probably be doubling the amount called for in the recipe the next time I make it. Even if you are not a huge fan of lavender I would encourage you to still try this with the original amount as the taste is extremely mild. However, the entire recipe would be delicious without it as well. 🙂
Next I skipped the gelatin she uses in her vanilla whipped cream and just whipped it up with the remaining ingredients, making the whole process a lot simpler. I was having serious problems with the gelatin and getting the right texture and found it was not a necessary step in the end.
Overall this labor of love was sooo worth it! It tasted so fresh and fantastic I could not wait to enjoy more! Good thing I had plenty of people to share with. I hope anyone out there who tries this amazing strawberry lavender buttermilk cake finds it as special as I did.
