Are you ready for these Pumpkin Spice Magic Bars?!? Seriously guys, I know pumpkin spice is sort of a ‘love it or hate it’ kind of thing, but I’m fully on board here. These bars are packed with fall flavor without being overwhelming. A true pumpkin and spiced flavor mixed with layers of graham cracker, chocolate and cinnamon chips, coconut and pecans!
What are Magic Bars?
Magic bars / magic cookie bars / layered bars / Hello Dolly bars, this treat can be known by many names and is an old school dessert that goes back decades. It starts off with a graham cracker crumb base topped with a layer of sweetened condensed milk. The next few layers are super adaptable but generally include some kind of chocolate chips, coconut, and nuts.
My family has been making these classics for as long as I can remember. And let me tell you they’ve always been a hit! We basically never waited for them to cool off completely to cut into nice squares. Instead we’d just dig right into the warm gooey mess and enjoy ourselves. Totally normal right?!
How to make Pumpkin Spice Magic Bars
Start off by mixing the melted butter and graham cracker crumbs together until moistened. Press crumbs into a firm and even layer into your prepared pan. We want a nicely packed base as the graham crackers will be the crust holding our bars together.
Next, give the sweetened condensed milk, pumpkin puree, and pumpkin pie spice a good whisk to make a uniform mixture. Pour on top of the crust and spread to all corners.
Throw on the two different types of chips, the coconut, and nuts and were basically good to go! I like to sprinkle on some additional pumpkin pie spice at this point to really bring out those fall flavors. Give everything a gentle press to adhere to the pumpkin and pop ’em in the oven!
It’s hard to mess up when making these bars. They are super forgiving and highly adaptable. A quick and fun way to start off the fall season! I hope you give them a try.

- 1 cup chocolate chips
- 1 cup cinnamon chips (or butterscotch)

Instructions
- Preheat oven to 350°F. Grease and line a 13×9 inch pan with parchment paper. Leaving an overhang on at least two sides.
- Combine graham cracker crumbs and melted butter until the mixture resembles wet sand. Press firmly into an even layer in the bottom of the pan.
- In a bowl mix together the sweetened condensed milk, pumpkin puree, and pumpkin pie spice. Pour evenly over graham cracker layer.
- Sprinkle on the chocolate chips, cinnamon chips, shredded coconut and chopped pecans. Pressing down lightly to help everything adhere. Top with an additional sprinkle of pumpkin pie spice.
- Bake for 25-30 minutes, until the top is lightly browned. Allow to cool completely on a wire rack. For clean cut bars, chill in the fridge for 30 minutes before cutting.
Notes
- Cut each square in half on the diagonal for 24 triangle shaped bars.
- Cinnamon chips can be tricky to find. My local grocery store and Target stock them seasonally. If you can’t find them, substitute with butterscotch chips or more chocolate chips.
