Another week in the books! The days are shorter, the nights are colder and pumpkin is still in season! 🙃 Enter my favorite pumpkin pie protein smoothie. I started making a version of this smoothie about a year ago and kept tweaking until I found the perfect flavor and texture.
This smoothie is super creamy and satisfying. I especially love that fact that it feels a bit indulgent but comes with 0 guilt. Which is perfect if you’re making this for an after workout snack. Protein!! Most of the time I actually like to make this smoothie in the morning for breakfast but it’s really good at any point in the day.
The ingredients are all super simple and you probably have them on hand already. Especially this time of year, I know I’ll have some extra pumpkin puree hanging out in the fridge from another baking project. So it’s a great time to use up any leftovers.
Don’t be afraid of adding in oats to your smoothies too! It’s honestly essential here. The oats not only help with the overall pie vibe we’re going for but they also give the smoothie a better consistency and texture. Seriously, try it out and see for yourself. Remember, at one point we were all nervous about putting ‘greens’ into our drinks….and see how far that trend has gone now…
On another note, you can easily keep this recipe vegan too. Just be sure to use a non-dairy milk and a vegan protein powder (which is what I prefer to use). Otherwise feel free to swap in any milk or vanilla protein powder you like!
I hope your holiday season is off to a good start! Only 2 weeks left until Thanksgiving!! Unbelievable! Would love to hear what dish everyone most looks forward to on the big day!
Cheers!
