Peach Tea Popsicles

Hello friends! I’ve been a stranger around these parts for far to long. But that doesn’t mean I’ve stopped creating or baking! Oh no! I’ve got a few things to share before we officially say goodbye to summer. Starting off with these refreshing peach tea popsicles.

What better way to cool off in the summer heat than with an ice cold treat?! Even better since these popsicles utilize my favorite summer fruit, the peach! Ripe, sweet, and juicy, I look forward to devouring as many peaches as I can at this time each year. Also in as many different forms as possible. Besides these awesome popsicles, I’ve checked off making a peach tart, peach ice cream, and peach muffins. Peach scones and jam are next on my list! Are you drooling yet??

Peach Tea Popsicles

Back to these peach tea popsicles. They couldn’t be easier to make! Grab your favorite black tea and mix up a large pitcher full. Be sure to use the bigger sized tea bags specifically for making large batches vs the individual tea bags. It’s best to make the tea a few hours in advance or the night before so it has plenty of time to chill.

You can also prep the simple syrup the night before if you make a homemade version. (See recipe notes below.)

When you’re ready, blitz up a few of those ripe peaches, add to the black tea, sweeten to your liking and voilà, mixture is done. Transfer to a popsicle mold, pop in the freezer and practice your patience while everything chills out.

These popsicles are just like sipping on an icy glass of peach iced tea (actually better)! Very Southern! Best enjoyed on a warm day, lounging in your favorite spot outside. 😎

In other news, you may have noticed the new name change happening here. This was actually a long time coming as I never felt especially connected with my previous blog name. Description

A simple and refreshing summer treat utilizing seasonal peaches and freshly brewed iced tea. 


Ingredients

Scale
  • 20 oz fresh brewed black tea, chilled
  • 3 medium peaches, peeled, pitted, and roughly chopped
  • 6–8 tbsp simple syrup* or honey

Tools:

  • popsicle mold
  • popsicle sticks

Instructions

  • In a blender or food processor, blend the peaches until they are a smooth puréed consistency.
  • Add 12 oz of the peach purée to 20 oz of the chilled black tea.  Mix in the simple syrup or honey, 1 tbsp at a time, until you’ve reached the desired level of sweetness.  Stir gently to combine.
  • Carefully fill each popsicle mold with the peach tea mixture.  (It’s easier to pour the mixture into a large measuring cup for more accurate pouring.)  Place in the freezer for 1 hour.  After an hour, insert popsicle sticks, leaving about 1 1/2 inches outside of the mold.  Place back in the freezer and continue freezing for at least 4 hours or until popsicles are set. 
  • To remove popsicles from mold, run under hot water for a few seconds to loosen the edges. 

Notes

Simple Syrup:

  • Combine 1/2 cup water with 1/2 cup granulated sugar in a small saucepan.  Heat over medium heat until sugar is dissolved completely, stirring gently.  Allow to cool completely.  Transfer to a clear jar and store in the fridge until ready to use.
