Description

A healthier take on delicious apple muffins, filled with heart healthy oats, protein packed greek yogurt and naturally sweetened with apple sauce and maple syrup. Breakfast & snack time just got a whole lot easier and tastier!


Ingredients

Scale
  • 2 cups old fashioned oats
  • 1/2 cup all purpose flour
  • 1 cup unsweetened apple sauce
  • 1/2 cup plain greek yogurt
  • 1/2 cup real maple syrup
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • pinch nutmeg
  • pinch salt
  • 1 medium apple, small diced
  • 1/2 cup pecans, chopped

Instructions

  1. Preheat oven to 375°F. Lightly grease a standard size muffin tin with cooking spray, about 12-14 muffin cups.
  2. In a large food processor, pulse oats until a course flour starts to form. It’s ok if there are still large pieces of oats.
  3. Add all other ingredients from flour to salt into food processor and mix together until well combined. Scraping down the bowl as necessary.
  4. Transfer mixture to a separate large clean bowl and stir in diced apple and nuts.
  5. Fill each muffin cup 3/4 full with batter. Bake for about 15 minutes or until a toothpick inserted in the center comes out clean.

Notes

*Diced apple and nuts are optional, but they really make this recipe extra delicious so I would highly recommend adding them both.
**Can also sub walnuts for the pecans.
