Description
A healthier take on delicious apple muffins, filled with heart healthy oats, protein packed greek yogurt and naturally sweetened with apple sauce and maple syrup. Breakfast & snack time just got a whole lot easier and tastier!
Ingredients

- 2 cups old fashioned oats
- 1/2 cup all purpose flour
- 1 cup unsweetened apple sauce
- 1/2 cup plain greek yogurt
- 1/2 cup real maple syrup
- 2 eggs
- 1 tsp baking soda
- 1 tsp cinnamon
- pinch nutmeg
- pinch salt
- 1 medium apple, small diced
- 1/2 cup pecans, chopped
Instructions
- Preheat oven to 375°F. Lightly grease a standard size muffin tin with cooking spray, about 12-14 muffin cups.
- In a large food processor, pulse oats until a course flour starts to form. It’s ok if there are still large pieces of oats.
- Add all other ingredients from flour to salt into food processor and mix together until well combined. Scraping down the bowl as necessary.
- Transfer mixture to a separate large clean bowl and stir in diced apple and nuts.
- Fill each muffin cup 3/4 full with batter. Bake for about 15 minutes or until a toothpick inserted in the center comes out clean.
Notes
*Diced apple and nuts are optional, but they really make this recipe extra delicious so I would highly recommend adding them both.
**Can also sub walnuts for the pecans.
