It’s 5 o’clock somewhere right?! I got you guys covered for the next Thirsty Thursday, happy hour, cocktail party, rough Monday…you get the picture. This pretty pink gin fizz cocktail combines two of my current favorite flavors, grapefruit and elderflower!
Now elderflower liquor has been a small obsession for me the last year or two. I started seeing elderflower cocktails popping up on more and more menus so I just had to try it. It’s hard to even remember when or where I had elderflower first but ever since I’ve been obsessed! If there is a drink with elderflower liquor, especially St. Germain, on the menu, there’s a very high chance that I’ll be ordering it!
Grapefruit on the other hand, I’ve actually loved for many years. Grapefruits are not all created equal, however! Obviously the riper and more in season the better, like all fruits. Luckily it’s winter citrus season still so the grapefruits are a plenty in supermarkets. I like to pick up a large bag of them at Costco for much cheaper. I’ll cut them up and have as a daily snack, occasionally bake with them, or juice them for fun stuff like a gin fizz cocktail!
Back to the elderflower in this recipe. I used both St. Germain liquor and an elderflower concentrate to really bring out the flavor. I’m sure this may be a bit extra for some of you, but trust me, it’s worth it! I used this elderflower concentrate from IKEA, but if you don’t have an IKEA nearby (or don’t want to be bothered by the overwhelming nature of the store), Amazon also has some options such as this. If all else fails you can also substitute simple syrup for the concentrate. Simple syrup is equal parts sugar and water (ex: 1 cup of each) that is brought to a light boil on the stove for about one minute or until all the sugar has dissolved, then cooled back to room temp. Store the cooled syrup in the fridge.
