I know what you may be thinking, “this doesn’t look like a delightfully tasty baked treat!” And you’re right, it’s not. But it IS a delightfully (and maybe surprisingly) tasty and HEALTHY green smoothie. My current Go-To Green Smoothie in fact.
Like many people, I find myself trying to “reset” now that the holidays are over and a new year has started. I’m getting back into a regular exercise routine and working to regain some balance in my diet. Which is still pretty hard to do in January since it’s my birthday month!! So obviously cake is involved! But regardless, my craving for sweets is strong year round, so finding balance and alternative options is key for me. This smoothie is a perfect alternative for me because the fruit provides a nice sweetness that can satisfy my craving.
I’ve been making this smoothie a ton over the last month or so. Don’t be turned off by the idea of leafy greens in a smoothie. The green smoothie trend has been around a while now and I think it’s here to stay. As long as you have your ratios right you can’t even taste the “green” parts of the smoothie since the fruit provides plenty of flavor and natural sweetness.
Honestly, green smoothies (especially this one) are great in sooo many ways. Not only does it help sneak more green produce into your diet but the coconut water will help hydrate you and the ginger is good for digestion. I actually find myself more energized when I have one in the morning. No joke, I’ve even skipped having my morning coffee once or twice when this smoothie was my breakfast! 🙈 Which is CRAZY talk if you know me! I ALWAYS have coffee in the morning!
Anyway, I just love the ease of making a smoothie. Pre cut frozen fruit is always a win because it’s super convenient, chills your drink without the need of ice, and makes out of season fruits available year round! Go on, give this smoothie a try! You know your healthy January self wants you to!

Description
A fresh and fruity pick me up green smoothie with a ginger kick and hydrating coconut water. Perfect for a quick and easy healthy breakfast or snack.
Ingredients
- 1 cup coconut water
- Handful fresh spinach
- 1/2 inch fresh ginger root, peeled and sliced
- 1/2 cup frozen mango
- 1/2 cup frozen peaches
- (Optional: 1 tsp agave syrup, for added sweetness)
- (Optional: 1 scoop vanilla protein powder)
Instructions
- Place all ingredients together in a high powered blender and blend for 1-2 minutes, until thoroughly blended.
- Makes 1 large smoothie, or 2 small smoothies (for sharing)!
