We can all thank Trader Joe’s for this idea because it really started with them. Has anyone else had their mini dark chocolate cookie butter cups before? No? Just me? They’re basically just like mini peanut butter cups, but of course filled with cookie butter! Soooo good! Well, sadly I don’t think TJ’s sells them anymore! (😭 sad day!) So of course I had to make my own.
The pairing of dark chocolate (or your chocolate of choice) and cookie butter is a match made in heaven! But ya know, if peanut butter is more your style go for that! Peanut butter is the classic pairing in this candy but why not have fun and switch it up. YOLO! (<– you can tell the coffee is definitely kicking in now!)
These cookie butter cups are great for when that chocolate craving strikes. But also, how great would it be to give these to your special someone? Valentine’s Day treats anyone?! ❤
A quick note on this recipe before I sign off. In the batch of these cookie butter cups I ended up taking photos of I put too much of the chocolate on the bottom of the cup, making them thicker than intended. More chocolate per cup? That’s never a bad thing! But if you’re going for the more traditional and thinner sized cup make sure to follow the amounts listed in the recipe below. Do as I say, not as I do! Either way, you can’t really go wrong here! So enjoy!

Description
A homemade twist on the classic candy cup. Chocolate filled with creamy cookie butter! Only 3 ingredients and less than 30 minutes to make. What’s not to love!?
Ingredients
- 12 oz chocolate, melted (I like 60% dark chocolate)
- 2 tsp coconut oil, melted
- ~1/3 cup cookie butter (about 1 1/2 tsp per cookie cup)
Instructions
- Combine melted chocolate and coconut oil. (I find it easy to melt the two together in a large measuring cup in the microwave for 30 second increments until fully melted.)
- Line a 12 cup muffin tin with paper or silicon liners.
- Layer the bottom of each cup with 1/2 TBS melted chocolate/oil mixture. Next, layer about 1 1/2 tsp of cookie butter in the center of each cup, being sure to leave space around the edges. Lastly, top cookie butter with another 1 1/2 TBS chocolate, or enough to cover the cookie butter.
- Freeze for 15 min to set.

Best stored in the fridge.
