It’s almost Friday!! Which means it’s almost the weekend! Which means time to sleep in, stay in your pajamas and enjoy your coffee with some of this fresh out of the oven cinnamon roll pull apart brioche bread!
Perfect for a weekend or holiday morning, this bread will bring back some of your favorite childhood memories, or at least it did for me. Lounging in my pj’s, Sunday morning cartoons, and the scent of cinnamon rolls in the oven! Ahh to be 10 again…
But this time instead of your typical cinnamon rolls from a can, why not step out of the box and try your hand at this version instead? Don’t be intimidated by the thought of making brioche, it’s easier than you may think. This was my first attempt at making brioche, well making any bread actually, and I was surprised at how quickly it came together. The final product wasn’t half bad either if I do say myself. The bread was soft and fluffy with a light crust around the top.
I’ve had my eye on this recipe since the holidays but never got around to making it until recently. The original recipe calls for adding eggnog to the bread dough but since the holidays are long gone eggnog isn’t easily available anymore. I’m actually not even an eggnog drinker but I thought it sounded like a nice twist on the recipe. I’ll definitely have to try it out when the holidays swing back around this year.
This bread does require a bit of forethought as most of the work is completed the night before the bread is baked. But it makes it that much easier to just wake up and instantly throw in the oven the next morning. Wait until those wonderful aromas fill the house!
Keep a close eye on the dough while letting it rise. Mine doubled in size in just an hour. I had so much dough the roll barely fit on the baking sheet! You could also make this into two smaller breads by using two regular size loaf pans, but I liked the look of laying it out in a log shape. You could also make this into traditional shaped cinnamon rolls by slicing the log into even sized rounds.
Oh wait, I lied earlier, I did do one other thing before throwing in the oven. I spread the top with melted butter and some of the cinnamon sugar mixture I reserved from the filling while the oven was heating up. Again, not much work for a lazy morning.
Most importantly, do NOT forget to add the frosting!! If you have vanilla bean pods or vanilla bean paste I would highly recommend using in the frosting. It will make for a richer vanilla flavor. And you cannot go wrong with that! This frosting was the perfect addition to the cinnamon roll brioche bread. Oh what a lovely morning it was…
